Off-season ice hockey regimen

I've been playing hockey for my entire life and just turned forty. I've been working hard this off-season on my lower body no upper body (a hockey stick is not heavy). My schedule goes like this... day 1, I ride the stationary bike for 24 mins at high resistance. day two I run sprints, 3 sets flat ground, 3 sets up an incline, 3 sets up a steeper hill, 3 sets stop and goes, and 3 sets of a plyometric jumping routine. On day three I squat with a barbell.Day four is a rest day although yesterday I did a light jog to push a little blood into my legs. Also, I'm trying to lose some belly so I'm cutting down on calories while eating protein bars and fruit during the day and maybe a sandwich or some thing like that in the evening so my grumbling stomach won't interfere with sleep. These grueling workouts bring me to my knees and I'm thinking I may be over training. What do you think of my off-season training? Am I doing to much? could I do more? How is my diet? Is there anything else I could do to decrease body fat while building muscle in my legs? Today my quads are sore but I went through with the bike workout just the same. Is that a good idea or no? I'm into my 5th week now and have 3 more weeks 'til the start of the season. Should i continue with this routine or should I mix things up a little? Go American Olympians !
