  1. um rice with peas and corn and herbs with egg to hold it together mixed together and stuffed into the capsicum and baked until tender (capsicum)

  2. Stuffed Peppers?

    My favorite recipe comes from Vegetarian Times

    14 oz tofu squeezed and mashed

    2 oz cooked wild rice

    1 tsp oregano

    2 oz onions chopped

    1 clove garlic, chopped

    1/2 tsp basil

    3 oz olive oil

    Mrs. Dash and pepper to taste

    4 medium-size red peppers

    Heat olive oil and saute onions and garlic until transparent.  Add crumbled tofu, cooked wild rice oregano, and basil.  Cook for 5 minutes, stirring constantly to avoid burning onions.  Add Mrs. Dash and pepper and set aside to cool slightly.  

        Cut off stems of peppers, remove seeds, and wash peppers.  Fill peppers with tofu mixture and steam for 10 - 15 minutes or until stuffing is heated through.  Serve with a miso sauce.

    Serves 4

  3. I use them same recipe!!!

    1 cup rice

    1/2 cup cheddar cheese

    1/2 cup dried tomatoes (soaked)

    1 table spoon basil

    1 onion

    1 tablespoon parsley

    Boil rice until soft. Chop onion into frying pan for 5 minutes. Return onions to bowl. Add rice,tomatoes, cheese, basil, parsley to bowl. Mix. Stuff into capsicums and bake for 45 minutes on 360.
