  2. My hubby makes this GREAT roll, take a look at the below recipe....

    Ingredients:

2 loaves (1 lb. each) frozen white bread dough, thawed

    1/2 pound mild sausage

    1/2 pound hot sausage

    1 1/2 cup mushrooms

    1/2 cup chopped onions

    3 eggs

    10 ounces shredded mozzarella

    1 teaspoon dried basil

    1 teaspoon dried parsley

    1 teaspoon dried rosemary

    1 teaspoon garlic powder

    Directions:

Allow dough to rise until nearly doubled. Cook and crumble sausage. Add mushrooms and onions. Cook and stir until sausage is brown and vegetables are tender. Drain and cool. Beat 1 egg and set aside. Add to sausage mixture 2 eggs, cheese and seasonings.

Roll each loaf of dough into a 16x12 inch rectangle. Spread each loaf with 1/2 sausage mixture, to within 1 inch of edges. Roll up, starting at narrow end, seal edges. Place on greased baking sheet. Bake at 350'F for 25 minutes; brush with beaten egg. Bake at 5-10 minutes longer or until golden brown. Serve warm.

  3. Breakfast burritos are easy and they travel well.

    Makes about 8:

    1 pound ground pork

    1 can chopped green chiles

    1/4 tsp salt

    8 eggs, beaten

1/2 pound cheddar or jack cheese.

    10" Tortillas and water

Cook the pork and add in the chiles and salt.

Add in the eggs and stir until cooked.

When slightly cooled add in the cheese.

Warm each burrito on a skillet to soften it. Use an ice cream scoop to fill the tortillas and roll into burritos.   Take the edge closest to you and roll over the filling and pull to you to make a tight burrito. Brush the far end of the tortilla with water. Fold the sides twice:

    First folds like this \___/

    Second folds like this / """"" \

    then roll over

so it looks like this <==>, but fatter.

Let stand on the seam for a few minutes. It will self-seal with the moisture.  The burritos should be about 2" thick and 6" inches wide. Store in an airtight container.

These reheat very well in the microwave and are a good hand food.  Sorry vegans!

top with your favorite shredded cheese

Bring this mixture just to a boil; remove from heat immediately. Carefully drizzle over the roll pieces.
