Question:

Ok IM SO CONFUSED!! IN sushi.. do you wet the nori or leave it dry??

some say to leave it dry and some say when its wet it curls up!! but i tried to leave it dry and it didnt roll up right.. so what is the correct thing to do!!

  2. I wet my fingers and moist the edge of the nori that will be wrapping back to connect not the rest and I don't over do the water (just enough so it will stick)

  3. Definitely dry!  If you roll traditional maki, with the nori on the outside, you need to leave about an inch-long strip without rice on it.  Start rolling with that strip at the top.  You wet that strip so that it sticks and keeps the roll closed.  If you make inside out rolls with the rice on the outside, it will stick by itself.

  4. dry and if it is for rolling sushi, it should be the roasted and crispy one.

  5. Maybe you didn't add enough rice wine vinegar to your rice.  The proper amount should make the rice damp enough to properly roll with dry nori.

  7. If you tried it dry, then apparently you need to wet it. I would just wet your fingers...

  8. I wipe mine with a damp cloth. So, neither wet nor dry.
