Sounds good to me!

As the angels get larger though if a pair turns up with a male left you could have some fighting issues.

Once they sexually mature, if you have a pair I would get rid of the one left and just let the pair breed in the tank.

The angels are fine, but young pictus cats prefer to school.  At 5-6", there's not much room for this preference.  However, you should be okay with one, as long it doesn't reach maximum size of around 2 feet.  Unlikely in an aquarium.
