  1. Definitely! Salad is great for catering, because you can make so much of it, it can match any theme you might have (Caesar, garden, fruit, Caribbean, etc.) and it's usually the first thing you run out of

Soups I could see, but people can be pretty picky about their soup (At least in my experience)

  2. No such thing as a "dumb" question or idea!  Depending on who you are catering for and for what function, it may be very appropriate to serve soup and salads!  Here are some possible menus for a buffet:

Salads:  Spinach with mandarin oranges, crumbled bacon, candied walnuts, feta cheese, french dressing; Chopped green salad with tomatos, black olives, chopped celery, carrots, cucumbers, radishes, ranch dressing; Pasta salad with rotelle pasta, sundried tomatos, marinated artichoke hearts, kalamata olives, chopped salami, feta cheese and Italian dressing.

Soups:   Chicken noodle vegetable; Shrimp bisque; Chickien tortilla soup; Tomato basil bisque

Main dishes:  grilled chicken; stuffed pork tenderloin; london broil.

Side dishes:  Au gratin potatos; Wild Rice Pilaf; Sweet potato casserole

Desserts:  cupcakes, brownies, mini cheesecakes, lemon tarts, pecan pie bites

  3. It depends, if it's for a fancy function I would not do soup otherwise I think it should be fine.  I've seen it done before.

  4. Salad, no soup because you don't see that much at buffets. only sometimes

  5. go wit salad not everyone loves soup but most people like salad

  6. Tossed Salads seem to be at every buffet table I have ever seen, even cookouts...  Tossed salad and potato or macoroni salad.   I would forget about the soup.

  7. Cold soup in the summer is fine, gazpacho or cherry soup. Seafood bisques and chowders  are upscale. We've served beef stew. The heartier meals are better in the fall and winter or something in between like acorn squash soup with sage pesto.
