Why do you guys put an asterisk in the word vegan? To replace the a?

It's not replacing the "a".  It's a shortcut describing either vegetarians or vegans

It's shorthand for "vegetarians and/or vegans."  The * is a wild card that substitutes for either the "etaria" or the "a."  It's just easier when you're referring to both groups at once.

Its just easier for us who give answers where vegan or vegetarian is used constantly.

It's much shorter than writing vegan or vegetarian.
