  1. put the broccoli in a perforated pan and set it over boiling water to steam to bright green. Or you could put it in a microwave dish with a little water, cover with plastic wrap and cook it for 2 min. or until bright green


  2. Put it in a steaming basket and steam over a pot of water, for 5-7 minutes until it is bright green. Taste test for firmness. Plunge into cold water to set the colour, then return to reheat and get to the softness you wish.

    Step8 Pour cold water over them to keep them from cooking further. You can now add any seasoning you like, from garlic and pepper, to ginger and sesame oil.
