  1. cooking book is a good guide for you

  2. Flour, eggs (or if you don't do eggs, whatever you traditionally substitute...they're for consistency, not flavor), chopped or shredded cabbage and water.  Other than that, it's all up to you.  That's what "okonomi" means.  "Whatever you want."

Just mix them all until you've got just enough batter to almost submerge the cabbage.  The batter should be about like pancake batter.  Then mix in whatever else you want.  You don't want meat?  Don't put in meat.

Cook it like a pancake, except longer, because the cabbage really slows things down.

Serve (traditionally) with okonomiyaki sauce (don't get Otafuku brand...it has many uses, okonomiyaki is not one of them) and mayonnaise (if you don't do eggs, skip this if you like).  If you can't find okonomiyaki sauce, Kikkoman teriyaki glaze is a close substitute, and much more common.  If you use mayo, see if you can find asian-style mayonnaise in the squishy plastic squeeze bottles.
