Olympic Beach Volleyball...?

What do the numbers on the left of the scores mean?

The team scores, something like that. I'm not really 100% sure.

they do the games out of 5 "mini-games"

the numbers on the left are the number of those "mini-games" they've won so far.

the number on the right is the score of points for this "mini-game"

I'm not exactly sure what you are asking, but often to the left of the scores is the number of sets they have won in that match.

For example, in Beach Volleyball they play the best out of 3 sets.

EDIT: In INDOOR volleyball it is the best out of 5 sets.  But in BEACH volleyball it is the best out of 3.
