On those little lemon cucumbers, can you or do you eat the skin? or peel?

the skin is just a tad more tender than its green cousin, I grown them every year. I like to score the peel for a more decorative appeal.

I have never ate the skin. My mommy always peels it.

When they are pale yellow they can be eaten skin on. As they mature and become a brighter shade of yellow, the skin becomes a tad harder and one must peel it off.
