If you're in the US, Setanta sports through directv has a stranglehold on the market, unless you don't mind sitting in front of your computer to watch matches.  They have most of the Guiness matches as well as some celtic league and other matches, and they will have all of the world cup matches in the fall.  ESPNU occasionally reairs old Churchill cup matches, but I think their contract is up now.  Outside the US, Fox sports, and Sky are a couple good networks to check out
