You can learn stick fighting at any school that teaches JoJutsu.

You can probably learn it at any school that teaches Savate

You can learn it at SOME schools that teach Tai Chi.

Although I am not a great fan of it, some schools teach The Cane Masters System. You can find a listing of schools that teach the Cane Masters method on the Cane Masters site (under "Links.")
