Oops i forgot the egg in my meatloaf recipe? what do u think will happen? what purpose does the egg serve?

The egg, im sure has a water base, or some other substance that has polar molecules. Polar molecules [like water] are cohesive and adhesive. That just means they stick to other water molecules and to other substances [or molecules].
Also, the egg contains protein. When protein is heated it permanently changes form. But the meat also has protein, so no biggie if you dont have the egg.
P.S. Protein mutation is what makes cooked food..... cooked
