coz they have low boiling point, so they vaporize. you get the characteristic odor and its their natural smell.

Both ether and ammonia are volitile substances. When you open the bottle these substances begin to diffuse. At first the odor is concentrated near the bottle and is very intense. But over time, due to Brownian Movement, the odors become detectable throughout the room and eventually they disperse far enough  that the concentration becomes too low to detect the odors.
