Organic methods of preventing/treating plant fungal infections?

Question

What are some of the organic methods of preventiing or treating plant fungal infections such as bights and rusts that are organic and work well?

Please list the type of infection, so I know that we are thinking of the same problem to use treatment on.

bordeaux mixture is technically organic (copper sulfate) and kill loads of fungi.

i tend to live with rust, in fact i never got it untill i grew hollyhocks, then it spread to my leeks and garlic. seems much worse when plants are under water stress.
