Outdoor, casual wedding. What to serve?

We have one month until my friends wedding and her caterer just backed out. She doesn't have the funds to hire another one so we are making the food. I am trying to get some ideas for easy hor dours. Probably looking for 4-5 that can be made easily and serve up to 100 people. We are also trying to get some more ideas as to the buffet. I am making penne ala vodka but we still need more options. Any ideas? Doing the whole hamburger/hotdog thing is out of the question. Also, how much beer/wine/liquor would suffice for the guest list. Any help would be great. Thanks!

  4. To save money, cut the booze.  If people want to bring a gift of wine to share, then share it.

    Know those fruit/veggie platters and meat trays that the grocery store has?

    Either make a homemade version of it, or buy it a day or so before hand, what ever will be the cheapest.

    You can use french bread to make sub sandwiches.

  5. For alcohol, figure 1 drink per hour per guest + 1 additional drink per person.

    For food, I would go with a nice quality salad with blue cheese, baby greens, light vinagrette, red onions, and possibly an in season fruit tossed in.

    I'd also do a lighter pasta.  Something tossed in olive oil with seasonal veggies.  

    Perhaps a ratatouille dish (SO easy to make) and a separate container of steamed rice to serve it over?

    Head to Costco and see what you can think of when you look at the bulk items and cans of stuff.

  6. You could do bratts in a slow cooker and boil them in beer. Its easy and you dont have to worry about them being overcooked or getting dried out. Just an idea! Good luck!

Sam's club has great appetizers that can easily be heated.  They are already ready and only need heating.  I would also have a meat tray, cheese tray and fruit tray along with a whole bunch of split and buttered buns (folks can make their own sandwiches).  Check out the deli at your grocery store.  They are VERY good about making up trays for any large get togethers.  I needed stuff for a funeral with up to 100 folks and they were able to come through with all of that within 24 hours.

    Popular appetizers include cheese, ham or bacon wrapped around dill pickles, put in toothpicks and then slice.  Also include a tray with carrots, celery and what not with a dip.  If you feel you have time to breathe, go on down to the library and check out some books on appetizers. You will see a lot of yummy things that can work them to fit your budget.
