Oven wont heat, shuts down in few seconds

Question

Amana Elec Wall Oven ACOS3040SS, about 10 years old.
Checked power supply, have 240 and 120V across leads to panel..
Clock works, Conv Fan works.
Bake, Broil, and Conv all start, hear relays clicking, then oven shuts down with a click.
Xformer looks "cooked".
Worried because had a bizarre Electric Company Service issue, where they kept dropping 240 leg to my house over several months. No clue if my oven has low voltage cutoff, think my oven may have been operating and pulling higher current with this service issue.
I am an engineer, comfortable with a multimeter, could use a wiring diagram and expert advice.
