What are each of the character's defences for the crimes they are accused of??

You should 1-read the story which is great and 2-check out sparknotes http://www.sparknotes.com/lit/andthenthe... and read their analysis of the major characters and summaries.

It's been a few years since I read that story, but I don't recall a defense from every character. It may be stated, but details like that have not stayed with me. Hopefully sparknotes will help you.
