  27. We had some friends over and this is what we had  I started out with this salad:

    Black-Eyed Pea Salad

    1 pound dried black-eyed peas

    3 chicken bouillon cubes

    1/4 teaspoon ground white pepper

    2 teaspoons onion salt

1 (4-ounce) jar marinated artichoke hearts

    1/2 cup sliced radishes

1 green bell pepper, seeded and chopped

    1 cup thinly sliced celery

    1/2 cup sliced green onions

    3/4 cup bottled Italian dressing

    Salt and pepper to taste

    Hot pepper sauce, to taste

Soak black-eyed peas overnight (or at least 6 hours) with enough water to cover peas by two inches.  Next morning drain and rinse beans. Put rinsed beans in a large kettle with 6 cups hot water, bouillon cubes, white pepper and onion salt. Bring mixture to a boil, cover, lower heat and simmer for 45 minutes or until peas are just tender. Drain peas and place in a large bowl; set aside.  Drain artichoke hearts, pouring marinade over peas. Chop artichoke hearts into bite-sized pieces and toss with peas along with remaining ingredients. Season to taste; cover and chill until serving time.

    Then we had:

    Plantation-Style Grilled Pork Chops

    4 pork chops, 1 1/2-inches thick

    1/3 cup cider vinegar

    1/2 cup molasses

    1/2 cup prepared mustard

    3 tablespoons Worcestershire sauce

1/2 teaspoon crushed red pepper flakes

Place chops in self-sealing plastic bag.

In small bowl stir together remaining ingredients and pour over chops. Seal bag and let stand at room temperature for one hour, or refrigerate overnight. Remove chops from marinade, discarding remaining marinade. Grill over a medium-hot fire for 12 to 15 minutes, turning as necessary to brown evenly.

Along with that we had the following:

    Mashed Sweet Potatoes

    4 sweet potatoes

    1/4 cup sugar

    1/2 cup butter or margerine

    2 eggs beaten

    1 teaspoon vanilla

    1/3 cup milk

    ***Topping***

    1/3 cup milk

    1 cup butter or margerine

    1 cup brown sugar

    1/2 cup flour

    1 cup chopped pecans

Boil and mash potatoes, mix in sugar, butter, eggs, vanilla and milk. Place in baking dish.

    Topping

Melt butter, mix in rest of ingredients. Spread on top.

Bake at 350 for 25 minutes.

    Southern Sytle Cornbread

    2 cups yellow cornmeal

    1 1/2 cups flour

    2 teaspoons salt

    2 teaspoons baking powder

    1 teaspoon baking soda

    3 eggs, beaten

    1 tablespoon vegetable, for skillet

    2 cups milk

    1/4 cup melted butter

    melted butter for brushing top

Preheat oven to 425°. Put oil or shortening in a 10-inch iron skillet and place in the oven to preheat while making batter.

In a mixing bowl, combine cornmeal, flour, salt, baking powder and soda.  In another bowl, whisk together the eggs, milk, and butter. Combine with dry ingredients and stir until all ingredients are moistened. Batter will be like a thick pancake batter. Carefully, with heavy oven mitts, lift skillet out and turn to coat all of the inside surface with oil. Pour in batter and return to oven. Bake for about 20 to 25 minutes, until browned. A toothpick inserted in center should come out clean.

    Green Beans

    3 tablespoons butter

    8 slices bacon, diced

2 pounds fresh green beans, trimmed and cut in 1-inch pieces

freshly ground black pepper, to taste

In a large skillet over medium heat, melt butter; add bacon. Fry bacon until crispy; set aside. Bring a pot of water to a boil; add beans. Boil for about 10 minutes, or until desired doneness is reached. Drain beans; add them to the skillet with bacon and butter. Toss well and heat until well coated. Add pepper; serve.

Lots of sweet tea to drink and for dessert:

    Peach Cobbler

    2 cups sifted all-purpose flour

    2 teaspoons baking powder

    1/2 teaspoon salt

    sugar, about 1/4 cup, divided

    1/2 cup shortening

    3/4 cup milk

3 1/2 cups sliced peaches (one large can, 28 to 32 ounces, drained)

    1 tablespoon fresh lemon juice

    1/2 teaspoon ground cinnamon

    1 teaspoon butter

1 cup sweetened whipped cream or vanilla ice cream

Sift flour into bowl with baking powder, salt, and 1 tablespoon of the sugar. With pastry blender, cut in shortening until crumbs are fine. Add milk to make a soft dough. Combine sliced peaches with lemon juice, 2 tablespoons sugar, cinnamon, and butter in a casserole or baking dish. Pat out dough to fit over the top of peaches; vent to allow steam to escape. Bake in 450° oven for 10 minutes; reduce heat to 350° and bake for an additional 25 minutes, or until crust is golden brown. Serve warm with a dollop of whipped cream, ice cream, or light cream with a little sugar and nutmeg to flavor.

    Served with coffee
