  1. Hummus and veggies rolled up in a tortilla

    Lettuce, chickpeas, carrots, cucumbers, and vinegar and lemon juice on top

    Peanut butter sandwich with a banana

    Veggie burger on whole wheat bun

    Cereal and a 8 oz. carton of soy milk or almond milk

    Soup in a thermos

    Cold colorful pasta with Italian Dressing on it

  4. I was watching this this cooking show.

    Pre-heat oven 450 degrees.

    A cooking sheet.

    A little cut up tomatoes and crush with a little bit of pressure, and chop up some garlic and drizzle some olive oil.

    Place in the oven for 3-5 mins.

    Pull out a bagged salad or a fresh chopped salad, a little olive oil, balsamic, salt/pepper and when tomatoes/garlic is ready place on top of salad.

  7. Make a veggie sandwich. Put tomatoes, lettuce, sprouts, pickles, avocado and mustard all on two pieces of whole wheat bread.

    For a side dish, bring a baggie of celery and apple slices with a container of organic peanut butter to dip them in.

    If you want something to drink you can take along a bottle of water with a pack of protein powder.

  8. I travel all day and don't have access to a microwave or fridge, so I pack. Today, I had sliced avocado with tomatoes and red leaf lettuce on a wheat pita. It was surprisingly delicious! I soaked the avocado in some lemon water before I packed it to keep it from browning.  This sandwich keeps well in a cooler. Try it!

  9. You could do something as simple as a peanut butter and jelly sandwich, a tomato sandwich, pasta noodles or rice, hummus and pita bread, and many types of fresh fruits and vegetables ........ here is one idea for you ....... = )

    Vegan Antipasti

    Dressing:

    1/4 cup red wine vinegar

    1 tablespoon chopped fresh basil

    1 tablespoon minced garlic

    2 teaspoons chopped fresh oregano

    Spike seasoning, to taste, available in health food stores

    Freshly ground black pepper, to taste

    1/4 cup olive oil

    For the dressing: Place vinegar in a bowl. Add oil slowly while whisking, then season to taste.

    Marinade:

    1/4 cup olive oil

    1/4 cup balsamic vinegar

    1 tablespoon garlic, minced

    1 tablespoon fresh basil, chopped

    1 teaspoon sea salt

    1 teaspoon pepper

    For the marinade: whisk together olive oil, balsamic vinegar, garlic, basil, sea salt and pepper. Marinate the mushrooms and tofu for 5 minutes. Grill the mushrooms, then cut them in quarters. Grill the tofu, then cut into 1-inch pieces.

    Salad:

    2 portobello mushrooms, peeled, bottom part of stem removed

    1 pound tofu, firm, sliced into 1/2-inch pieces

    1 large red bell pepper, seeded and cut into 1-inch cubes

    1 large yellow bell pepper, seeded and cut into 1-inch cubes

    1 large green bell pepper, seeded and cut into 1-inch cubes

    1 bunch asparagus, cut into 1-inch pieces

    1 large red onion, peeled and cut into 1-inch cubes

    15 slices veggie pepperoni, halved

    1/4 cup black olives, pitted and cut in half

    1/4 cup pepperoncini, seeded and cut in half

    1/2 cup sun-dried tomatoes, soaked in warm water and halved

    1 tablespoon capers, whole

    1 tablespoon garlic, minced

    2 tablespoons fresh basil, chiffonade

    1/2 tablespoon fresh oregano, chopped

    To prepare the salad, place all the ingredients into a mixing bowl. Pour dressing onto vegetables and stir gently. Chill salad before serving.

  10. A salad and soycheese sandwiche: tomato, lettuce and Toffutti soy cheese slice. I bought this from Holland and Barrett a few weeks ago, it's really good.

    Some fruit, like an apple, pear, satsuma or banana

    Some houmous and vegetable sticks (such as carrot batons).

    I buy smoked tofu, beansprout and chilli jam sandwiches all the time but you can make them at home so it's cheaper- maybe give it a try. It's the best vegan sandwiche I have ever tasted. =]

  11. how about grilling a portabella mushroom, a slice or eggplant and a roasted pepper with some grilled onions.

    you can use any or all of the above in combination and they would taste great on a multi grain bun.  i like to marinate my vegetables in soy sauce.or ginger dressing.
