Most of the pancreatic surgery I've seen is very involved (like a Whipple procedure) and takes all day (6-8 hours).

It does depend a lot on the surgeon.  Some are quick, some are slow.    It also depends a bit on the patient.  Obese patients always take longer, because any abdominal procedure becomes more difficult.  Older people tend to have fragile tissue, which can cause problems as well.
