Party desserts - what to bake/prepare for up to 20 people?

im looking at a terrine of summer fruits, and Individual summer puddings with summer berries also Individual strawberry shortcakes. We are meant to be having a BBQ this sat BUT weathers not looking too good at the mo and thats what the ocassion is..

So do u have any ideas? the individual cakes were for the kids really, but there are only going to 3! rest adults, what could i tempt them with?? THANKS!X

  1. Island Way Sorbet in real fruit shells are an excellent and light dessert after a BBQ!  Perfect for summer entertaining: easy, delicious, and fun!

  3. Make cake slices. Pour a sponge mix into a large flat shallow baking dish and when cooked and cooled, add different frosting's or icing & cut into slices =]

    1. Summer trifle (could do individual ramekins or one big bowl)

    2. Eton mess

    3. Summer fruit salad

    4. Black forest gateau

    5. Baked bananas laced with rum/brandy, served with creme fraiche

    6. Make-your-own Knickerbocker glories or ice cream sundaes (lay out lots of different types of ice cream, sauces, toppings and sweeties/chocolates).

  5. make some home made fruit jellies - oyou can do them individually, or a few really big ones, and then suspend fruit in them to look pretty.  Serve it with some ice cream.  

    Or, make a couple of pavlovas with different types of fruit.

    PETITE CHERRY CHEESE CAKE

    2 8-oz. cream cheese, softened

    3/4 c. sugar

    2 eggs

    1 TB lemon juice

    1 tsp. vanilla

    24 vanilla wafers

    1 can cherry pie filling

    Beat cream cheese, sugar, eggs, lemon juice & vanilla until light and fluffy.  Line muffin pan with papers and place a wafer in bottom of each.  Fill the cups 3/4-full with cream cheese.  Bake at 375 for 15-20 min, or until set.  Top each with about 1 TB of pie filling and chill ...  Makes 24

    You could do a dessert buffet with the cupcakes, mini cheesecakes, brownies and some other cookies


  9. Brownies, and they are popular with adults as well as kids. I made them for this bbq i went to last week and they were gone in seconds....i wish i had made more! Here is the recipe

    Prep Time: 30 mins  

    Cook Time: 40-45 minu

    Ready In: 0  

    Servings: 20

    Ingredients

    200 gr plain chocolate, broken into pieces

    115 gr butter

    175 gr ground almonds

    175 gr caster sugar

    1 tsp vanilla essence

    4 eggs (separateda0

    Directions

    Grease and line the base of an 18 cm x 28 cm flan swiss roll tin.

    Preheat the oven to 180c

    Place a large heatproof bowl over a pan of hot water, put the chocolate pieces into it and melt it

    Add the butter and stir until combined

    Remove the bowl from the heat and stir in the almonds, sugar and vanilla essence.

    Beat the egg yolks together, then add the chocolate mixture.

    In a sepateate bowl, whisk the egg whites until stiff and then carefully fold into the chocolate mixture.

    Spoon into the tina nd level the surface

    Bake for 45-50 minutes until its risen, firm to the touch and slightly cracket on top.

    Allow to cool in the tin and cut into squares

If you are not having a bbq you should just have a buffet with various sandwiches, sausage rolls, pasta, salad and people can help themselves to what they like...there's likely to be people who don't like certain things...You could always buy one of they tent things and still have the bbq outside!!

  11. what could be more tempting than a baked baileys cheesecake.

    so simple to make but yet absolutely delicious and looks great.

    ingredients.

    3 packs of cream cheese.

    tea spoon of vanilla essence

    cup of sugar

    k**b of butter

    cup of baileys irish cream

    pack of graham crackers or digestive biscuits depending on what side of the world your on

    sour cream

    pack of pecan nuts

    piece of white and milk chocolate

    some chocolate sauce.

    2 eggs

    start by preheating the oven to 150 degrees celcius.

    put the crackers or biscuits into a blender and blend to a fine consistency grate the milk chocolate and add to the biscuits. melt the butter and add to the biscuits and chocolate. give it another quick blend to mix everything up.

    grease a collapsable cake tin and add a layer of the biscuit mix to the bottom of the tray, make the layer just over a quarter inch thich, compact it with a flatish spoon.

    put this into the fridge for 20 minutes or so.

    while waiting for this add the cream cheese to a mixing bowl and add the sugar and grated white chocolate to taste, and give it a good mix. it should taste sweetish

    beat the eggs in a seperate bowl and add the baileys and vanilla essence to this.

    now add the egg and baileys to the cream cheese dish and mix it through.

    put this cream cheese dish on top of the biscuit and smooth out.

    put in the oven for about 45 minutes.

    take it out and let cool (not in the fridge though)

    mix the sour cream up with some sugar and baileys to make a frosting

    put this on top of the cheesecake.

    decorate it with the pecan nuts around the outside and drizzle the chocolate sauce around the center.

    now you got one of the most delicious cakes ever


  12. brownies cut into small squares so its a mouthful rather than a slab. looks classy and kids love em. maybe serve with strawberries?
