Question:

Pasta and Veggie recipes please?

I have lots of frozen veggies and pasta to use up. Any ideas for how to use them in a dish together? I don't want to use a red sauce or soy sauce and only have a little vegetable oil on hand. I also don't eat dairy, so please keep that in mind.

  1. Just do pasta primavera. You don't need any sauce, really. You can toss in a splash of white wine if you'd like.

    You could also do a pasta fritatta if you eat eggs.

    Depending on the veggies you have, you could make a macrobiotic sauce for the pasta. (Blend it up to make it smooth.) You could do a veggie-pasta soup.

    In short, you can't go too horribly far wrong.  


  2. Get a can of vegetarian chili, heat up peppers and chili together. Use on spaghetti in place of sauce. Massive protein and fiber. 8~)
