  2. I am a george Brown college culinary training grad. I also have my journey papers for the 4 Seasons.  My personal opinion is that Pastry Chef just sounds fancy to many folks.  Depending on where you are in the world you need to see how much money this career will return to you sadly many make more as waitress's then they do as pastry chefs.  As a side job or as a Bakery in a large town you have a chance but just to work in someones shop to earn a living is iffy.  Also the world wheat futures and soya futures are through the roof and prices for commodities like eggs and milk are also going up daily.  The North American crowd is also getting more health conscious so baking with things like quinoa flour and spelt flour may be better for you You would also be competing with big name grocery stores when many North Americans are getting and tighter with money, GOOD LUCK TO YOU.
