START by making the sausage rolls normally but when it comes to cutting them, instead of a knife you use a pastry shape cutter.

you can get a number of different shaped ones from your local hardware/cookware shop.

this may not be good but can't you cut out a shape then put the sausage meat on top then the same shape on top of that, i hope this helps its only a idea
