Pataya Chicken Recipe?

Does anyone have a good Pataya Chicken Recipe? I'm pretty sure it's just chicken & broccoli in a peanut sauce, so I could just whip something up- but I'm curious if anyone has a great recipe for it. Thanks!

  1. PATTAYA CHICKEN:

    There are a few variations to this dish, especially in regards to the vegetables used (besides broccoli), so just add your favorites.

    Ingredients

    ½ cup creamy peanut butter

    1 tablespoon soy sauce

    2 tablespoons fresh ginger root, minced

    ¼ teaspoon crushed red peppers, to taste

    4 oz. chicken stock*

    2 tablespoons oil

    3 chicken breast halves, skinned, boned, cut into strips

    1 C. broccoli

    1 C. red pepper slices

    3 Shiitake mushrooms, sliced

    1 C. carrot slices

    1 clove garlic, minced

    1 1/2 C. fresh basil leaves

    salt & pepper, to taste

    2 C. cooked rice or noodles

    In a small saucepan on medium low heat,stir together peanut butter, soy sauce, ginger root, red peppers and chicken stock. Set aside until needed.

    Heat oil in wok or large skillet. Over medium high heat, stir fry chicken for 4 minutes.

    Add vegetables, mushrooms, basil, and garlic. Saute for 3-4 minutes, until lightly tender.  Add the sauce and let simmer for about 1 minute. Serve over rice or noodles.

    *NOTE:  for a creamier version, use coconut milk instead.


  2. Ingredients:

    Honey (as much as you want)

    Chicken Breast

    Two large lemons

    Lemon pepper seasoning

    Salt

    Green Onions/onions (diced)

    Garlic finely diced

    Teriyaki Marinade

    Instructions:

    1) Marinade your chicken with teriyaki sauce, and honey. Don't forget to preheat your oven to 350 degrees.

    2) Cut 1 lemon into lemon disks. Cut the other lemon across and squeeze the juice onto the chicken.

    3) Season your chicken with diced garlic, onions, and lemon pepper seasoning.

    4) Combine everything well and place into oven.

    5) Optional: You can add the lemon disks if you like the taste of lemon rinds. Otherwise skip this step because the rinds will over power everything else.

    7) Keep in the oven for about an hour or intill the chicken is no longer pink inside. Check frequently and don't forget to drizzle the sauce over the chicken from time to time.
