Is there any specific info the phone companies use to assign you your phone number?

not particularly.

the only factors that come into play when the teleco assigns you a phone number is what area code you are located in, and what central office is feeding your address, which will determine the exchange (first 3 digits of your phone number after the area code) most central offices service several exchange numbers.

the last 4 numbers are randomly assigned based on availability, many times they will provide you with a choice of several numbers to choose from.
