Picnic foods?

I'm having a BBQ / picnic in my backyard next weekend, and I need some simple food suggestions. It's potluck also. (:

  1. Store-bought mayo is fine to use now.  They've added preservatives and stabilizers so that it doesn't cause food poisoning, like it used to:)....

    FRUIT AMBROSIA

    2 c. whipping cream

    1/2 c.  sugar

    1 tsp. vanilla

    1/2 tsp. almond extract

    1 large can mandarin oranges, drained

    1-2 cans fruit cocktail, drained

    1-2 c. flaked coconut (optional)

    3-4 c. miniature marshmellows

          Beat the cream, sugar & extracts to very stiff peaks.  Gently fold in the fruit & marshmellows until blended.  CHill....

    ARTICHOKE RICE SALAD

    1 package chicken flavored rice mix (like Rice-a-Roni)

    2 green onions, thinly sliced

    1/2 green pepper, chopped

    8 pimento stuffed olives, thinly sliced

    2 (6 oz) jars marinated artichoke hearts, cut up

    1/4 tsp. curry powder

    1/3 c. mayonnaise

           Make rice per package instructions.  Mix everything else into the hot rice.  Serve warm, cold or ROOM TEMP (great to leave out on a buffet table)

    on the B.B.Q I love morroccan spiced lamb (cinnamon, all spice and corrianda), beer butt chicken, little sausages marinated in mustard and honey.

    Potato salad, with mayo, tuna, red onion and corn is good for all.

  7. Try some picnic "roll up" sandwiches for something unusual.  The kids love 'em.

    What you need:

    ------------------------

    -aluminum foil

    -toothpicks

    -large tortillas (use wheat for low-carb)

    -thinly sliced cheeses

    -whole lettuce leaves

    -condiments of your choice

    -thinly sliced lunch meat of your choice (my favorite is Hillshire Deli Selects in the Glad container)

    The trick to get good roll-ups for this picnic recipe is the order you put the ingredients on the tortilla:

    Lay the tortilla flat on a piece of aluminum foil. Put a very light layer of your condiments on the tortilla.

    Lay the lettuce leaf down, then Lunch meat and Cheese.  Then simply roll up your picnic roll and secure with a toothpick.

    You can cut the roll into “finger-sized" roll-ups or leave them full-size.

    If you are short on time, some large Deli Shops have a Lunch meat called "Luncheon Roll" which is already a rolled-up mass of lunch meats and cheeses.  Ask them to cut the roll into slices of about 2 oz. each for making sandwiches.  You will then have "spiral" lunch meat and cheese to create sandwiches.

    Keep 'em chilled and served cold.

  10. First off nothing with mayonnaise!  It will spoil and not be good so none of that.  You could bring some pasta salad, potato salad, veggies and veggie dip, cupcakes, little tea sandwiches and some fun drinks for adults and kids...lemonade, tea, iced coffe, etc.

  11. Sandwiches are traditional. PB&J, Tuna, and Ham & Cheese are classic. You can have a variety of different sandwiches. Then you can have water, lemonade, iced tea, etc.

From past experience, I need you to advise you to be prepared!  In the past, it has been my experience that people show up late or just don't show up...so don't let that ruin your event!  I would NOT ask the attendees to bring appetizers, as if they are late, you're in a spot.  Also, anything else that is a must have, don't depend upon someone else.

    That said, I suggest you have, at minimum, the appetizers (even if that is chips & dips?), a fresh fruit platter (even if that is only watermelon), the main course (even if that is burgers or hot dogs...let someone else bring the hot dogs, if you like?), if you are doing burgers or dogs...do up a nice platter of "fixins" (sliced tomato, lettuce, pickles, relish, onions, mustard, mayo, ketchup)...from there, make at least one dessert, even if others are bringing some.  You can have ice cream in the freezer as a back up, or you can make these:

    PETITE CHEESECAKES

    2 (8 oz) cream cheese, softened

    3/4 cup sugar

    2 eggs

    1 Tablespoon lemon juice

    1 teaspoon vanilla

    24 vanilla wafers

    1 can (1 pound, 5 ounces) cherry (or blueberry) pie filling

    Beat cream cheese, sugar, eggs, lemon juice & vanilla until light and fluffy.  Line regular muffin pans with cupcake papers (or the foil ones are really pretty); place a vanilla wafer in each and fill 2/3 full with cream cheese mixture.

    Bake at 375 for 15-20, or until set.  Cool & top each with about 1Tb. of pie filling and chill.

    Makes about 2 dozen

    Once they see these, people eat them, even when they say they are full!

    You didn't really say if you wanted suggestions for what you should make, or what you should ask others to bring???  If you want to be able to suggest things for others to bring...hot dogs are one suggestion...hot dog buns another...potato salad, cole slaw, dessert dishes, any salad dishes, maybe deviled eggs, sodas or BYOB will save you some bucks...does that make sense?

    So, with a little planning, you can have a nice event & be able to enjoy it yourself too!  Good luck!
