Question:

Pico de Gallo for 40 people, help?

I have been invited to a party and asked to bring a salsa or dip. It has a Mexican theme so have the recipe for Pico de Gallo. But, how many tomatoes, onions, chiles, coriander, lemons and bags of tortilla chips should I buy? I hate to overspend and be left with loads but at the same time be short. It has to be made fresh so don't have the luxury of popping out at the last minute to buy more .... I'll be busy getting dressed for the party!!!

  1. Start Here - this is for 40 people, oh and get 4 bags of chips. Let the person throwing the party keep it if it is not eaten. Common Courtesy.

    INGREDIENTS

    10 medium tomato, diced

    10 onion, finely chopped

    5 fresh jalapeno pepper, seeded and chopped

    20 sprigs fresh cilantro, finely chopped

    10 green onion, finely chopped

    1 tablespoon and 2 teaspoons garlic powder

    1-1/4 teaspoons salt

    1-1/4 teaspoons pepper

Dont know where you get your recipe from but the Pico de gallo i know,(the version from Michoacan state) is only 4 ingredients;tomato,onion,cilantro,serran... peppers. i have seen people adding lemon and i hated it , it just robs the tomatoes of their flavor. Ihave never heard of coriander, dont even know what it is.

    to get you ratios correct, get 2 tomatoes for every onion an 2 chiles for every onion. you only need a couple of bunches of cilantro because it goes a long way, you can use the leaves and stems i recomend using the coarse setting on a food processor to do the chopping. try doing this;

    12 tomatoes

    6 onions

    3 bunches of cilantro, NOT PARSLEY

    12 chiles serranos.

    i recomend you chop each ingredient on its own, do the chiles last. i would advise that instead of adding the chiles to the pico de gallo. put it on a separate bowl to make it optional

  4. You are not requested to  make Salsa for 40 people...not everybody eats or likes Salsa.

    I bag of chips and a bowl of salsa will do...you can make the salsa the day before, this way all the flavors will blend together.

    Makes about 3 cups  ... double the recipe for 6 cups.

    1 1/2 pounds plum tomatoes, seeded, chopped

    3/4 cup chopped onion

    1/2 cup chopped fresh cilantro

    3 tablespoons fresh lime juice

    3 tablespoons minced seeded jalapeño chilies (about 2 medium)

    1 garlic clove, minced

    Mix all ingredients in medium bowl. Season with salt and pepper.   Cover; chill.

  5. I would just make enough for a one gallon container of salsa, and buy roughly 6 large bags of chips. You may run out of salsa but hey, they can snack on the chips, and it won't set you back to much....LW
