Pilau rice and biryani?

Can anyone provide me with recipes to make pilau rice and a mushroom biryani? I have followed Indian recipes books, but they have never come out as well as those I have eaten in an Indian restaurant. Also, does anyone have a quick recipe for making an Indian bread. I have a go at making curries but rely upon supermarket nan breads. I would like to make my own bread, but please keep it simple! Thanks in advance.

  1. How mouthwatering your question is.

    I suggest that you make an Asian friend as this way you can see for yourself hows its done.

    Add 2 glasses of water to 1 glass of TILDA basmati rice, add whatever veg you want,spice etc... and slow boil.

    Indian bread...........you need Chappati flour.

    Mix with water and make a dough.Take a small piece of dough and roll it round.

    Put the rolled chappati on the Indian frying pan called taffa and put it on gas.Let both sides get the heat.

  3. Naan Bread Recipe

    1lb white flour

    1oz dried yeast

    1 tsp nigella seed (kalonji)

    6 tbsp plain yogurt

    2 tbsp ghee or melted butter

    1 tsp salt

    1 tsp sugar

    3/4 cup warm water

    oil or ghee to coat

    Dissolve sugar in warm water. Add yeast. Yeast should froth, if it doesn't, start over with fresh yeast.

    In a seperate bowl, sift salt with flour and add nigella seeds.

    Make a well in the centre and add yoghurt, ghee and yeast mixture. Knead well until it forms a dough. Shape into a ball. If dough is sticky, add more flour until elastic.

    Coat a seperate bowl with oil or ghee and roll dough into it until fully coated. Shake off excess oil and cover with damp tea-towel or cloth. After 2 or 3 hours, dough should have doubled in size. This happens best in a warm area (my mom puts hers in a low oven). Knead the dough and divide into around 6 equal portions. Flatten and mould into typical 'pear' shape naan.

    Preheat oven to 450oF/230oC and bake for 10 mins. Brush with ghee or butter and serve.

    Jeera Pulao

    Ingredients:

    Basmati rice 2 cups

    Thinely sliced medium Onion 1

    Cumin seeds 2 tsp

    Ghee 2 tbsp

    Salt to taste

    Lemon juice 1tsp

    Method:

    Wash and soak the rice in water. In a heavy-bottomed saucepan, heat the cooking oil or butter add the cumin seeds. After it starts to splutter, add the onions. sauté till golden brown.

    Drain the rice, add to the ghee and stir-fry for few minutes. Add 3 cups of water and salt. Leave uncovered and bring to boil. Add Lemon juice, cover and cook over a low flame for about 10 minutes. Serve hot.
