  1. Try googling for recipes ~ there is a greek sauce "tzatski" that is made with plain yogurt, cucumbers and onions. It's great and is usually served with gyros. It would be great with pita or pita chips :)

  2. For 1 pot -

Tziki - yogurt, 2 cloves crushed garlic, 2 inch dicedcucumber, 4 - 5 mint leaves chopped.

Riata - yogurt, pinch tumeric, 2 inch grated cucumber, 1/2 green chilli finely chopped, 1 clove crushed garlic, 1 tablespoon fresh corriander (optional)

Mango - yogurt, 3tablespoons mango chutney

Lemon - yogurt, 1 lemon zest and 1/2 juice, 1 tablespoon chopped parsley

Curry - yogurt, 2 teaspoons curry paste

    happy dipping

  3. The secret to making wonderful Greek Taziki sauce is properly straining the yogurt.  Here are the instructions...

Here is a great recipe for Tzatziki:

    In Greek: τζατζίκι, pronounced dza-DZEE-kee

Tzatziki is traditionally served as an appetizer and can be left on the table as an accompaniment to foods throughout the meal. The key to great tzatziki is the thick creamy texture that allows it to be eaten alone, as a dip, as a spread, and as a condiment.

    INGREDIENTS:

16 ounces (2 cups) of strained Greek yogurt

4 to 10 cloves of garlic, finely chopped

1/2 cup of diced or grated cucumber (Kirby or "English")

    1 tablespoon of olive oil

    2 teaspoons of lemon juice

    PREPARATION:

Prepare all ingredients in advance. Combine oil and lemon juice in a medium mixing bowl. Fold the yogurt in slowly, making sure it mixes completely with the oil. Add the garlic, according to taste, and the cucumber.

Stir until evenly distributed. Garnish with a bit of green and serve well chilled.

    Yield: about 2 1/2 cups

Add mint or dill: Slight variations include 1-2 tablespoons of finely chopped fresh dill and/or fresh mint. Tasty additions!

    Preparation Tips:

Kirby or "English" cucumbers work best (usually wrapped in plastic wrap at the market). If not available, peel and seed the cucumber before dicing or grating.

After dicing or grating the cucumber, pat it dry with absorbent toweling to remove excess moisture.

The longer the tzatziki is refrigerated before serving, the more intense the garlic taste will become.

    Storage:

Tzatziki will store safely in the refrigerator for several days. If excess liquid accumulates on top, just pour it off.

    Serving Suggestions:

Friends who are passionate about tzatziki serve it with non-Greek foods including fried chicken, lunch/dinner omelets, and in other ways suited to their tastes.

  4. To make a quick dip:  just add a little cumin powder or smoky paprika.  A little freshly chopped cilantro, squeeze of lemon juice, salt & pepper.  Easy, healthy & delicious to boot!

If you like, you can make a yogurt raita (Indian salad):  add some finely diced red onions, tomatoes or cucumbers.

  5. I am a former chef and for a creamier firmer sauce/spread, I take and line my strainer with a couple of coffee filters, add the yougart, and let the water drain out about 2-3 hours, this makes a firm cheesey like componant, the recipes above all great, I use fresh garlic, cilantro, mint, cumin, lime juice a few chilis or cayenne pepper.

For Tzatziki I grate my cucmber sprinkle some salt on them and let them drain the water off, then mix my garlic, mint, cucumbers, salt & pepper fresh dill or dried, thin it with a bit of lemon juice, both spread are great with regular, greek or turkish pita, I also havea turkish/arabic ingreident called "Sumac" that adds a bit of zing also when garnishing.

  6. Indian relish

    INGREDIENTS:

    2 red bell peppers, chopped

1 sweet onion, peeled and chopped

1 cup white wine vinegar 1 cup white sugar

1 tablespoon crushed red pepper flakes

    1. In a medium saucepan over medium heat, mix together red bell peppers, onion, white wine vinegar, sugar and crushed red pepper flakes. Bring to a boil, then reduce heat to simmer. Stirring occasionally, cook 30 minutes, or until thickened. Refrigerate 4 hours or overnight before serving.
