can you give me some good recipe for pizza dough and method and how do you expand the dough in the air like pizza guys it seems to shrink back fast .

what fillings and tomato base is good and motzorella cheese

  1. This is a good recipe for pizza dough;

    3 cups all-purpose flour

    1 (.25 ounce) package active dry yeast

    2 tablespoons vegetable oil

    1 teaspoon salt

    1 tablespoon white sugar

    1 cup warm water (110 degrees F/45 degrees C)

    Combine flour, salt, sugar, and yeast in a large bowl. Mix in oil and warm water. Spread out on a large pizza pan. Top as desired.

    Bake at 375 degrees C (190 degrees C) for 20 to 25 minutes.

  2. Pizza Dough

    1 (.25 ounce) package active dry yeast

    1 cup warm water (110 degrees F/45 degrees C)

    2 cups bread flour****

    2 tablespoons olive oil

    1 teaspoon salt

    2 teaspoons white sugar

    ****flour is your variable ingredient in this recipe.  basically you want to use as much flour as it takes to be able to handle the dough without it being too sticky or loose.  to test this you will basically poke the dough with your fingers and if the impression of your finger stays visible, you need more flour.  and bread flour isn't necessary, all purpose is just find for making pizza dough.

    Directions:

    In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes. In a large bowl, combine 2 cups bread flour, olive oil, salt, white sugar and the yeast mixture; stir well to combine. Beat well until a stiff dough has formed. Cover and rise until doubled in volume, about 30 minutes, maybe longer. Meanwhile, preheat oven to 350 degrees F (175 degrees C). Turn dough out onto a well floured surface. Form dough into a round and roll out into a pizza crust shape. Cover with your favorite sauce and toppings and bake in preheated oven until golden brown, about 20 minutes

    Another way you might want to do this is to roll out your dough, put it on top of your stove (where your pre-heated oven is giving off the most heat) and cover it.  let it proof again, so the shape of the dough stays.  

    Don't forget to dock your dough if you do not have a pizza pan of some sort to crisp up the bottom of the crust.  You can do this easily with either a docking pin, or with a fork, lightly tapping the dough to create little holes for the gasses to escape.

    As for toppings, the pizza sauce is actually pretty easy.  #1 tomato sauce, #2 tomato paste (if available), #3 white sugar to cut the acidity of the tomato #4 diced white onions, #5 salt and pepper, #6 chopped garlic, #7 fresh chopped herbs or dried herbs, your choice.

    lightly cook onion and garlic in a little bit of olive oil until the onion is translucent.  add your tomato sauce.  let cook just until simmering, add tomato paste, a little at a time, until you can see it thickening up.  add your herbs & spices, not your sugar or salt or pepper.  let cook for approximately 20 minutes on low heat.  finally, add sugar salt and peper in increments until the tomato sauce is not too acidic and the flavor is what you are looking for.  cool the sauce before putting on pizza dough.  when pouring the sauce on the pizza, start in the middle and work your way to about 1/3" from the edge of the pizza.  top with your favorite cheese and toppings.  very simple to make pizza, just time consuming.  it makes the 30 minute wait a lot more bearable when you really want pizza.

    FYI:  pizza dough can be frozen for about 3 months, so making extra isn't a bad idea.
