Ryan air is your best bet. I would fly to Turin or Ancona and explore the surrounding regions. They are very undiscovered and  extremely beautiful. I am biased though as I live there!!

For cheap flights, go to www.kayak.com.  As for places in Italy, definitely do Venice, Florence and Rome.  Aside from all of the touristy stuff, you should definitely hit up these two restaurants:

The restaurant in Rome was incredible! They have a wine cellar that is ancient and so cool!
