  1. just make an omelet

  2. An omelet is a great idea.  You could also add some meat.  Whatever you have.  You can cut up chicken, or even some lunch meat.  Ham is best in omelets, though, for me personally...  If not, the ingredients you have are fine.

You could also make a quiche.  All you would need for that is a pie crust.  About 6 eggs in a bowl, add the rest of your ingredients and bake on 375 for about 30 mins or until the eggs are set in the middle...  Hope this helps.... Yummmmmmm.....

Oh, the correct spelling is sautéed ;)...

  3. scramble them all up, then make some toast and have a scrambled egg and stuff sandwich.

  4. Sautee your onions, pepper and mushrooms in butter. Remove them from skillet.

Wisk eggs together adding one Tbs of milk, salt and pepper.

Pour eggs into the skillet you just used to sautee veggie's in.

On low heat, cook until eggs are almost set (not runny). Add veggie's and grated cheese. Flip your omelette and slide onto plate.

In same skillet melt 4 Tbsp butter, and add 4 Tbsp of flour. Wisk these ingredients while adding slowly, 2 cups milk. Keep wisking until white sauce begins to thicken. Salt & Pepper to taste.  Pour over your omelette and enjoy.  You can also add a handful of grated cheese to the white sauce and make it into a creamy cheese sauce (if you can handle the calories).  Add buttered toast and you have a great meal!

  5. Crustless "Quiche"*

1 1/2 cups filling ( your mushrooms and onions )

    4 large eggs

    1/2 cup milk

1/2 tsp. salt and 1/4 tsp.ground black pepper

1/2 cup shredded cheese of your choice

Prepare (sauté) filling ingredients, then set aside.

Grease a 9-inch pie plate. Put your oven rack in the center position

    heat oven to 375 degrees.

Whisk eggs, milk,  salt and pepper.

Stir in cheese and prepared filling.

Pour mixture into the greased pie plate

    bake about 30-45 minutes

begin checking it at the half-hour mark, a knife inserted to test it will come out clean when it's ready

Remove from oven and let  it cool for 5 minutes or so.

    Cut into wedges and serve.

*It isn't technically a quiche because it has no crust.

  6. Try this recipe.

    Onion Mushroom Cups

    1 tablespoon butter

    2 tablespoons onions minced finely

    1/8 teaspoon garlic powder

    12 ounces chopped mushrooms

    Salt

    Pepper

    2 tablespoons softened butter

6 firm white or wheat bread, crusts removed

    3 eggs, beaten

    2 tablespoons cream

1/3 cup freshly grated Swiss cheese

    Preheat oven to 350 degrees F (175 degrees C).

Melt 1 tablespoon of butter in a large skillet over medium-high heat. Stir in onions and garlic powder, and cook for 30 seconds until fragrant. Add mushrooms, and continue cooking until softened and lightly browned, 4 to 6 minutes. (You may only have to chop and warm up your sauteed onions/mushrooms with a little garlic.) Season to taste with salt and pepper, then set aside to cool.

Meanwhile, spread softened butter onto one side of each slice of bread. Press the buttered sides into a muffin tin; set aside.

Stir together eggs and cream, then stir in the cooled mushroom mixture. Divide this custard equally among the toast cups. Sprinkle the tops with grated Swiss cheese.

Bake in preheated oven until egg mixture sets, and tops are golden brown, about 20 minutes.
