Please answer question about rennet casein in my pizza?

OK i want 2 know what rennet casein is?and does it have to do with meat, fattening of any animal cause I AM STRICTLY VEGETARIAN

    Casien is just a phosphoprotien, Rennet is the stomach acid of a juvenile mammal.


  2. Remember that not all rennet is from a cow, it can also be from other animals (i.e.:pig, sheep).  

  3. Casein is a different thing than rennet, casein is a type of protein in dairy and if you are a vegetarian that permits yourself dairy, you're in luck.

    Rennet, however, is made from enzymes scraped from a calf's stomach and is therefore not vegetarian. A baby cow has to die, essentially, for people to use rennet. It's used to make cheese. You can't tell if the cheese has rennet by looking at it, so you might want to check with the company that made the pizza and ask if their cheeses are made with rennet or vegetarian-friendly enzymes. Some cheese companies list on their websites or on their packaging whether their cheese is veg-friendly or not, and stores like Trader Joe's have lists in their stores available of cheeses that do or do not have rennet in them. In order to make cheese, basically, you have to introduce some sort of enzyme to get the milk to begin to curd over... there's so many ways to make cheese but rennet is used very frequently and it interacts with the casein in the dairy very easily. On a side note, it is costlier to use rennet than to use vegetarian enzymes... however there is a perceived notion that cheese made without rennet is cheaper and of lower quality... gourmet cheese and high quality cheese companies often use rennet. :(

    centrifugal separation of whole milk. The skim milk may be acidified to produce acid

    casein or treated with an enzyme, resulting in the so-called rennet casein. The precipitated

    casein curd is separated from the whey, washed and dried. Water-soluble derivatives of

    acid caseins, produced by reaction with alkalis, are called caseinates.
