  1. I just boil up some al dente elbow macaroni, drain and cool, add in some cubed cucumber, some diced roma tomatoes, some cubed colby jack cheese, garlic powder, onion powder, salt and pepper, mix in some mayo, some Miracle Whip and some prepared yellow mustard, mix well and sprinkle in some bacon bits (Bacos).  I don't mix or measure the mayo mix, just add, stir and if you need more add it.

    You can add in any diced veggies you like and, of course, use any type of pasta you prefer.

    You can leave out the mayo, Miracle Whip and mustard and simply pour a bottle of Italian Dressing (oil or creamy) over the pasta and mix well.

You really only need a good Italian salad dressing.  I use penne pasta because it’s chewier.  You can use whatever you like- spirals, elbow macaroni, bowties.  I add thinly sliced carrots, small diced celery, red bell pepper, yellow bell pepper, cherry or grape tomatoes sliced in half.  If you use an entire 16oz box of pasta, you will use about half a bottle of dressing.  You can’t mess it up.  Just add and stir it up-  you’ll know when you have enough.  You want everything to be nicely coated and a little bit on the bottom.  For that quantity, I add ¼ teaspoon dried basil leaves.  It adds a lot to the flavor and to the presentation.  If you want, add sliced green onions, broccoli, sliced black olives.  Traditionally, this should have ½ cup of grated parmesan (real parmesan, not the stuff in the can)-  but omit if you want this to be vegan.  Just chill in the frig for an hour or more.  I just made some earlier this week to bring to a potluck.  Yum!

I use fusilli (corkscrew) pasta and cook until al dente.  Cut up some celery, bell peppers, olives, onions, tomatoes, and toss in the bowl with the drained pasta.  I once made this dressing from "Garden of Vegan" called You Must Make This Dressing, which was Green Goddess-y.  There's also a good Lemon-Poppyseed dressing in that book.

    Find a simple creamy (or not) dressing that looks good, make that, and toss over the salad before serving.

  4. Boil curly colorful vegan pasta. Then drain the water and let the pasta cool in the refrigerator for a little bit. Then add vegan Italian dressing and chopped up bell peppers to the pasta. Then put in the refrigerator again to get it cold. Finally, enjoy!

    Cut up some veggies (cucumbers, grape tomatoes, sun-dried tomatoes, squash, carrots, peas, etc...)--anything you like or have on hand

    Mix all together with some Italian dressing

    Add salt and pepper to taste

    This is the easiest way to make a pasta salad--you don't have to make your own dressing.  It's really just whatever you have on hand.

  8. Choose your favorite kind of pasta and boil it until it's aldente.  While it is still hot pour on some Italian dressing.  The heat helps it to soak in.

    Add cubes soy cheese, broccoli, cauliflower, tomatoes, and any other vegetable that you like.  Then place it in the fridge overnight to allow the ingredients to marry.

    Before you serve it add some more Italian dressing.  That will give it the extra kick...plus a lot will have soaked into the pasta overnight.
