  1. take extra firm tofu cut it up into cubes, deep fry and put it in a container with some buffalo wing sauce


  2. first you need soy milk (unsweetened one), you either make it or buy it. if you are making it, you use 150grams of soybeans for every litre of water you are using. soak the beans in water overnight and grind down with water. filter the mixture with muslin cloth and boil it.

    to make the tofu, you need a coagulant (use plaster of paris, the stuff you use to mold out figurines etc). use one half teaspoon of plaster of paris powder for every litre of soy milk. mix it with a little water to form a thin paste and put it into a large container.

    when the milk comes to a boil, pour it really fast  into the plaster of paris mixture. do not stir! cover container with foil and stand for at least one hour, until set.

    line a metal pan that has holes in it( a steamer does fine) with mulsin cloth. scoop the set tofu mixture into the pan, cover with the overhanging muslin and put an appropriately sized dish over the top. put weights on top (about three to four bricks) and let it press and drain for 15 to 30 minutes (depends how soft or firm you like your tofu). remove from pan and rinse with water. to store your tofu, put in a bowl or pan and cover with cold water and store in the fridge.
