Gujrat has the highest milk production in India. Why don't you start developing some varieties of foreign cheeses and pretty soon you'll have a great demand for it. Study the manufacture of Parmesan, Cheddar etc. There is literally thousands of varieties from, french to swiss cheeses etc. If you can produce good quality at cheaper price you're set!
