please tell me a vegi dish which can be prepared in less than 15 minutes but it should be new?

  1. im not vegetarian but have a few friends that are...i got this recipe from one of them and make it whenever any vegetarians come over ...and they always comment on how nice it is.

    its satay tofu.

    cube your firm tofu and marinate in some soy with a clove crushed garlic and a tsp ginger paste for about 5 mins

    cut up some onion, red pepper, zucchini and open a can of pinapple pieces...

    thread all of these bits including drained tofu onto some bamboo skewers and grill them...try and keep the bits pretty uniform in size so they cook evenly. (you can also fry them in a pan with some oil if you prefer)

    while these are cooking add the following to a small sauce pan

    3 big spoons of peanut butter

    1/2 cup sweet chilli sauce

    i can coconut milk

    pinch of salt

    stir and let it simmer until the kebabs are done.

    pour sauce over the kebabs.

    i have also made this as a stir fry...just omitted putting the vegies/tofu on the skewers and quickly stirfried them then added all the sauce ingredients to the stir fry pan.

    i like to serve this with cooked jasmin rice with some roasted cashews and chopped chives or corriander tossed thru.

    i also usually serve a salad of green leaves of your choice with a can of white beans and some finely sliced onion and tomato and cucumber (add whatever other vegies you like such as carrot etc..but dont forget the beans as they give some added protein and are yummy)...dressed with equal parts of lemon juice and olive oil, a pinch of salt and one crushed garlic clove. and grind some pepper over the top.

    its awesome ...i dont even like most vegetarian food but this one rocks.

This is a nice dish made of cauliflower and tahina sauce.  First fry up some chopped onions and garlic in a pan.  In another pan...take a whole, washed cauliflower and separate each flower and brown with a small amount of oil...drain.  In a bowl you mix up tahina sauce, lemon juice, just a teaspoon or so,  pinch of salt and some dashes of water..mix up until smooth.  Add the chopped onions and garlic to the cauliflower and place in a pyrex dish ready to go in the oven.  Spread the not-to- thick sauce over the cauliflower.  Sprinkle with seasoning like cumin or cinnamon or allspice.   Add just a little water to the pyrex if it is too thick.  Bake for about a half hour or more until cauliflower is tender.  You can eat this dish with pita bread.  Also possible to add shavings of raw potatoe to the dish just before putting it in the pyrex for more texture and taste.  Enjoy.

  5. Bring to the boil a tin of coconut milk with curry paste and add vegetables. Simmer till done. Thai Jasmine rice to accompany. Veggies you could use include peas, green beans, peppers, cauliflower, aubergine, broccoli, sweetcorn, baby corn, sweet potato, tomato (add in last few minutes) chard, spinach (again add in only the last few minutes).

    Use three contrasting vegetables to make it look good - too many and you end up with a mess. Try sweet potato, green beans and hardboiled eggs, or spinach, paneer (Indian cheese) and peas. If you have cooked left over meat, then you can use that too. Pork and pineapple with spinach is very nice.

    If you have cooked rice in the fridge (like I always do as I love rice) then you can do a stir fry really quick.

  6. This is definitely something tasty & different!

    This is a wonderful recipe from the state of Maharashtra and one of my personal favorites. My grandmother used to have a jackfruit tree in her garden, so I was lucky to have tasted her “Phansachi Sukhi Bhaji” (Spicy Jackfruit Stir Fry). It was absolutely delicious and she made it every time we would visit. I have tried many times to recreate her recipe, this version is pretty close.

    For this particular recipe, green jackfruit or the unripe variety is needed. I am sure many of you are not very familiar with jackfruit. It is an extremely large fruit and unfortunately, very rare to find the fresh variety here in the US. I use the canned jackfruit, which is readily available in any Indian or Asian grocery store, it also makes this dish very easy to prepare. I encourage you to try this recipe, you will really enjoy this exotic delicacy!

    SPICY JACKFRUIT STIR FRY

    Ingredients:

    1 can of green jackfruit pieces

    1 inch piece of ginger, peeled and finely minced

    1 clove of garlic, finely minced

    2-3 fresh small Thai green chilies, halved lengthwise

    1 cup of green peas (frozen are fine)

    ½ tsp turmeric

    ½ tsp ground coriander

    ½ tsp red chili powder

    ½ tsp kala or goda masala (or use garam masala)

    1 tsp ground cumin

    salt to taste

    juice of ½ lime

    1 tsp black mustard seeds

    pinch of asafetida (hing)

    3-4 fresh curry leaves

    2 tbsp oil (vegetable or canola)

    freshly chopped cilantro leaves for garnish

    METHOD:

    Drain the jackfruit, rinse well, drain again and set aside until needed. In a large karahi or wok on medium high heat, add the oil. When hot, carefully add the mustard seeds. When the splattering stops, add the ginger, garlic, green chilies, asafetida and curry leaves. Add the jackfruit pieces and gently stir, be careful not to break them up. Add the spices (turmeric, ground coriander, ground cumin, red chili powder, kala or garam masala and salt). Stir gently to combine and add the green peas. Reduce the heat, cover and let simmer or 4-5 minutes. Add the lime juice and garnish with freshly chopped cilantro leaves. Serve with hot chapathis and fragrant Basmati rice.

  7. I love these broiled portobello mushrooms.

    4 portobello mushrooms

    1 tomato, seeded and diced

    4 slices provolone cheese

    2 tbsp. fresh parsley, chopped

    olive oil to drizzle

    salt and pepper

    Preheat broiler. Remove the gills of the mushroom with a spoon, (this only takes a second), and then place them on a cookie sheet, drizzle with olive oil, and salt and pepper. Next, place cheese on top of mushrooms, then tomatoes and parsley. Add another pinch of salt & pepper, and broil until cheese is melted. Enjoy

  8. In would suggest, Hummus (chick pea dip), Foul (fava bean dip) tabboulleh (parsley based salad), or fattoush (basicly a house salad with fried bread.

  9. Vegetarian tacos.

    You can either fry the corn tortillas to make them crunchy or buy the Taco Bell variety.

    These are the ingredients:

    3-4 potatoes (I use the regular white potatoes), peeled and cubed

    -1 medium onion, chopped

    -4 Roma tomatoes, chopped

    -lettuce or shredded white cabbage

    -salt and pepper to taste

    On a frying pan, add about 2 tablespoons of oil (I use corn oil), the potatoes, onion, and 2 of the Roma tomatoes.  Cook until the potatoes are soft, and add salt and pepper to taste.

    To the taco shells, add potatoes and top with lettuce (or cabbage) and tomatoes.

    It's actually very tasty and you can substitute the potatoes with boiled pinto beans.  Fry them on the pan with the tomatoes and onions and mash them with a potato masher.  

    My husband calls these "Tacos Dorados" which translates to "Golden Tacos."

  10. khichdi. Khichdi is a delicious Indian one-pot dish made from rice and daal. It literally means to mash everything up. You can get real fancy by adding vegetables and all sorts of spices.

    Take 1 cup rice, 3/4 cup moong dal, 1/2 tsp turmeric and 1 tsp salt. Add to pressure cooker along with 2+ cups of water. After three whistles, remove from heat. Mash up the cooked rice and moong dal adding a bit of warm water if you need to. Heat some ghee or butter in a small pan, add jeera (cumin seeds) till it gets brown and you can smell its lovely aroma. Pour on top of the khichdi. Serve hot.

  11. 15 Minutes does not give you much time to cut and or peel things.

    Saw some nice veggie dishes here, but most take much longer than 15 min. ... unless you cut everything in advance.

    15 min. - Cucumber Salad

    Peel cucumber, and slice paper-thin

    Add yogurt, with a dash of cummin seed, tumeric, salt & pepper to taste.

    If you still have time, chop a small onion very finely and add to the yogurt mix.

    No calories and very refreshing  :)

  12. I personally love a simple veggie sandwich. Slice an eggplant and put a little salt on the slices and let sit for 5 minutes than pat the slices with a paper towel to soak up the water. slice a red bell pepper and half an onion and throw it all in a lightly oiled pan with your favorite mushrooms. blend garlic basil leaves and mayo in a blender or mortal and spread on slices of toasted panini bread and add the vegetables when they nicely cooked. You can make about 3 or 4 sandwiches.
