  1. Very easy! You keep white in the fridge and take it out 20 min before serving. You keep red room temp and put in the fridge 20 min before serving. Place your bottles closed and lying down, the cool air will be in contact with a more surface of the bottle than if it would be standing up.

  3. The right temperature is the temperature you prefer, not what any rule book says. As a rule of thumb, red wines are served at cellar temperature and white wines colder but beaujolais (red) is served chilled. A wine rich in aromatics should be warmer to allow you to enjoy the bouquet before you sip.

    ROOM temperature is a definite NO-NO!!  

    In Europe, people had wine cellars.  They would go down, get a bottle, and it would be at serving temperature for reds.  Notice how this is underground, much like a basement.  

    Somewhere along the way people got the idea that going to the wine cellar was equal to the cabinet.  Yet, the standard room temperature is 72-75F.  And at 74F the alcohol in wine becomes offensive, harsh, and has a sharp bite to it.  These are all properties of poor serving, not the wine itself.

    The remedy is like the first poster said.  I prefer 30 minutes, but anywhere in the 20-40 minute range will work.  For reds, 20 minutes if you drink fast, 40 if slow.  This way the last sip is not too harsh.
