Pls help! Of Earth Shattering Importance! Ready to "lose it"! HOW CAN I MAKE FALAFEL THAT DOESN'T FALL APART?

They just disintegrate in my frying pan.

Waaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaa...

  1. It will fall apart because you are shallow frying it.

    Falafel must be deep fried.

    If you, for some reason, can't deep fry it, Then flatten the falafel a Little using your hand and make sure you leave a print of finger marks on the under side of Falafel, This will minimize the contact area between it and the frying pan.

    Don't move Falafel in the frying pan until you are sure they are done and firm, Then turn it very carefully.

  2. There are two keys to making good falafel.

    First, keep the amount of water you use when grinding the beans to an absolute minimum. More water

    makes grinding easier, but it also virtually guarantees that the batter will fall apart when it hits the hot oil. If this happens,bind the remaining mixture by stirring in a little flour.

    Second, Try to keep the oil as hot as possible, without being too hot that the falafel cooks only on the outside. If the oil is not hot enough, it will ske up the inside of the falafel and cause it to break.
