Gas stove, hands down. You can see how much heat is on by looking at the flame. You also have instant heat on and heat off.

I can't stand cooking with an electric stove. They're all different as far as how much heat you get at what setting. You really have to get the hang of a particular electric to master it. And, that means lots of trial and error (burned food).

Most good cooks prefer gas heat to electric.   They use to be more energy efficient, but with the gas prices going up again every two minutes, you may want to go with an energy-star electric stove.
