Crepe stands are everywhere and a popuar street food. Gyros/Greek sandwichs are very common. In the south of France, Socca, a sort of flat bread made with chick pea flour and olive oil is a traditional street food as is Pissaladiere, a sort of French pizza. Individual quiches and tarts made with a variety of fillings, onion being classic, are common in Paris.

I would say "Jambon Beurre" which is a basic ham sandwich with butter in a warm baguette (of course!!!).  

Also in winter, you can find hot chestnuts, sold on the street. Typical parisian food when it's cold outside.

They make the best crepes on those street stands! Grand Marnier & sugar is my favorite.

What I would give for a Merguez frite sandwich right now with some harissa sauce  and lots of salt!
