Porcupine Ball recipe.. For those that want it?

I asked a question on cooking in a crock earlier and I have had a number oaf people ask me how I make these so I'm posting it.. I know its not a question and i may be in the wrong area but here it is.

1 LB ground beef

1TBS onion Powder

1TBS Garlic powder

1 TBS season salt

1 egg

1 cup rice or 1 box rice-a-roni( if you use roni save the seasoning packet out)

Mix together and make in to meatballs, cook in a pan until all sides are browned, remove from pan and place in a deep baking dish. In the same pan the meat was cooked in fill 3/4 with water, 2 packages brown, mushroom or onion gravy mix, season salt and pepper to taste, 3 TBS beef bullion and if you use Rice-a-roni the seasoning packet from this.. bring to a boil stir in a thickener of choice (flour/water or corn starch/water) just enough to make it in to a thinner gravy... bring back to a boil and pour over the meatballs, cover and bake for 1 hour at 350*

Serve with smashed potatoes!!!!

**a you can use left over rice, brown rice, minute rice, long grain, what ever you have on hand.

You can do this with what ever you have on hand, mix it up its a pretty no fail recipe... Turkey burger works well using boxed stuffing rather than rice and seasoning, changing gravy to something poultry.

  1. Good to know the recipe does work with ground turkey, I had bought a package of chicken rice a roni earlier this week with the intention of trying it.

    My mom would make these when money was really tight, just serving a cooked vegetable on the side. She preferred simmering them on the stove for about 45 minutes on a low flame.

    It's a terrific inexpensive and filling meal that I still enjoy.

  4. I've made Porcupin Balls for over 30 years, and my recipe sounds alot better (and healthier).  My girls always loved it, and now my grandkids do too:)

    OVEN PORCUPINE BALLS

    1 lb. lean ground beef

    1/2 cup raw white rice

    1-1/2 c. water

    1/3 c. chopped onion

    1 tsp. salt

    1/2 tsp. celery salt

    1/4 tsp. garlic powder

    1/4 tsp. pepper

    15 oz. tomato sauce

    2 tsp. Worchestershire sauce

    Heat oven to 350.  Mix meat, rice, 1/2 c. water, onion, salts, garlic powder & pepper.  Shape by teaspoons into balls.  Place meatballs in ungreaxed 8" square pan.  Stir together remaining ingredients and water and pour over meatballs.  Cover and bake 45 min;  uncover and bake another 15 min.....  Serves 4-6.......Yes, the sauce is very good over mashed potatoes!


  5. I have a pocupine ball recipe too. It's my mother in laws recipe. It's a little different than yours. It tastes really good. Hope you try it sometime.

    Porcupine Balls

    1 egg

    ½ cup water

    1 envelope lipton onion soup mix

    1 ½ lbs lean ground beef

    ½ - ¾ cup uncooked minute rice

    1 – 46 oz bottle of Campbell Tomato Juice

    1 tsp sugar

    Beat egg slightly with water and 2 tbs soup mix. Mix lightly with beef and ¼ cup of rice. Shape into large meatballs (1 ½ to 2 inches). Roll in remaining rice, pressing it lightly into the meatball. Use more rice if needed.

    Heat tomato juice to boiling. Stir in remaining onion soup mix and sugar. Place meatballs in sauce and cover. Simmer, stirring several times for 50 minutes.

    Serving suggestions:  Great with a vegetable or salad and rolls.
