Pot Roast Emergency!?

I have been cooking a 2lb pot roast (brisket) for about an hour and half on the (gas) stove top in a dutch oven at a slow simmer..(set on about "2 1/2" -settings go "low 2 3 4 5 6 hi"). It still seems pretty tough. How much longer should it take? I just added veggies.

  1. veggies will need at least half hour and meat might need another hour

    although i cook 2 lb all the time and it usually falling apart after 2 hours

    doyou have enough liquid in the pot? helps break down the meat

  3. To get a pot roast tender you have to cook it on very low heat for an extended time.  I usually cook mine at about 250 degrees for about 6 hours.  Not sure about a gas stove.  The next best way is to pressure cook.

  4. In about another 30-45 minutes it will start breaking down.  (getting tender)  Next time, try it in the oven in a roasting bag.  A 2lb roast should take about 2 hrs at 350*

  7. Okay, peheat oven to 325 make sure roast is overed in liquid. i prefer onion soupmix and worchestershire sauce, and water.

    Put the dutch oven in the oven and bake for 2.5 to 3hrs.

  9. I would take the veggies out  and simmer the roast for at least another hour (watch the liquid so that it does not dry out) or until  the roast is tender, then add the veggies back in.  Make sure you don't over cook the veggies or they will be mushy.

    take the vegies out cook the brisket anouther hour return vegies. cook untill vegies. are done. Slice brisket very thin cross grain.before serving.

I would take out as many veggies as you can and then put it in the oven covered at 300 degrees and cook another hour and a half.Make sure there is enough liquid in the pan to keep it moist,1/4 of the way up the meat is good. Sounds yummy!! Good Luck.OHH Yeah put the veggies back in 20 minutes before the time is up. If they still are not cooked add 10 more minutes,it won't hurt anything.

  12. It might need another half hour to an hour. Make sure you have enough liquid in the dutch oven and on a gas stove i would cook it on a low setting like i was cooking rice so that means as low as it will go without the flame going out. Veggies are usually added during the last hour of cooking.  Just keep it up and dont give up...and if it turns out tough still...it may not have been a good cut of beef.

  13. When I make a roast I always put it in a glass pan and bake it in the oven. First I put it in a roasting bag that I get from the store. It has seasonings in it. I will add my potatoes, carrots, celery, in the bag. I have to poke the bag with a few holes for the steam to release while cooking. I think it's possible that you need to make the temperature higher by raising the temperature. Keep cooking till it's tender. If the pan is too thick it will take longer. Those aluminum cheapy ones with aluminum foil on top actually work well during turkey time as opposed to those heavy nice looking pans with lids. I learned that the hard way.
