Question:

Potato side dish to go with seafood.?

I have a tilapia crusted with tortilla, chipotle and lime and also some sweet chili shrimp. I want to make a potato dish to go with it, any ideas would be appreciated.

  1. 1.   I always like mashed potatoes, especially with fish. I like them rich with butter, milk, salt and white pepper.

    2.   I don't know the name but there is a really elegant preparation:

    Peel your potatoes and cut in half lengthwise.

    Place the cut side down and make parallel cuts down every 1/8-1/4 inch. DON'T CUT ALL THE WAY THROUGH!!!!!

    Mix bread crumbs with melted butter and seasonings of your choice. Work them carefully over and into the cuts of your potato halves, slightly stuffing them.

    Place in a buttered pan, Cover with foil and bake at 350°F for 30 minutes. Remove foil and bake another 10-15 minutes to brown slightly.

    3.   Baked potatoes.


  2. Whenever I make tilapia, I make this dish. I don't know what it's called but I take new potatoes, cut them into quarters, boil them in salted water with a crushed garlic clove and a little bit of onion for about 10 minutes. I drain the water and add either a tablespoon of olive oil or butter. It's light and doesn't overpower the fish

  3. I would serve with boiled potatoes.

  4. roasted red potatoes, or potatoes au gratin
