Potluck Food Suggestion?

I'm going to a potluck at work this week and I'm not sure what to bring. There will only be about 10 people and I was thinking of bringing a "main dish". I don't have access to an oven, a crockpot, toaster, etc. There is a microwave, but it's not very large. I read a suggestion of "pigs in a blanket", but I'm not sure how tasty they would be at room temperature.

  1. with that kind of access it would be hard to bring the MAIN dish, however, the best thing I have ever brought that was EASY and yummy was green bean casserole, which you can make at home and micrwave when you get there. It's delicious and even if it sits out alittle while it's still tasty.

    If it's kind of informal, maybe you can buy some of the BBQ tubs they sell in the refridgerated section of your grocery store. You can microwave it when you get there and just bring the buns and stuff.

  3. I think pigs-in-a-blanket would be great and they are good at room temperature.  As a matter of fact they are good at any temperature. Maybe a little something different would be to serve them with dipping sauces.  What about  honey barbecue, honey mustard and maybe a sweet /sour sauce.  The choices are unlimited.

  4. "Bacon wrapped smokies" would be your best bet. They can be fixed the day/evening before and then reheated in the microwave.

    1 pound package of "little smokies"

    1 pound package of bacon--cut the slices in half.

    Note: will make around 35-40 smokies, can double the recipe if more are needed. For around 10 people, 1 batch should be enough.

    Directions: Wrap a half piece of bacon around each smokie and spear with a toothpick. Place into a 9X13 baking dish and cover with 2 cups of Brown Sugar.

    Bake at 350* for 30-45 minutes or until sugar starts to carmelize and smokies start to crisp up. (The main thing is to get the bacon done).

    Serve immediately OR refrigerate until ready to heat and serve.

    Hope you like them, they are SO addictive!

  5. Bring a casserole dish full of chili. Stir it thoroughly and often as you heat it in the microwave and it will be fine.

  6. Meatballs in a sweet and sour sauce are good hot and cold; add some thinly sliced onions, carrots and green peppers.

  7. How about a nice dish that is meant to be served cold:

    Fruity Chicken & Rice Salad

    Ingredients

    Dressing

    2/3 cup red wine vinegar

    4 tablespoons honey

    2 tablespoons oil

    2 teaspoons sugar

    1 teaspoon salt

    Salad

    2 1/2 cups water

    1 cup carrot, diced

    3 cups instant brown rice

    1 cup raisins

    4 cups chicken, cooked and diced

    2 cups red seedless grapes

    4 tablespoons almonds, toasted and chopped

    2 tablespoons parsley, chopped

    Directions

    1-For Dressing: Mix vinegar, honey, oil, sugar and salt in a small bowl and set aside.

    2-For Salad: Bring water, carrots and raisins to a boil in a medium saucepan.

    3-Stir in rice, return to a boil.

    4-Cover and reduce heat to medium and simmer for 5 minutes.

    5Remove from heat and stir. Recover and let stand another 5 minutes.

    6-Place rice mixture into a pretty salad bowl and then add the chicken, grapes, almonds and parsley.

    7-Top with honey dressing and toss.

    8-Refrigerate at least one hour before serving.

    Red Wine Feta Chicken Salad

    Ingredients

    20 ounces chicken, cooked

    7/8 cup red onion, finely chopped

    20 tablespoons feta cheese, crumbled

    6 2/3 tablespoons red wine vinegar

    7/8 cup grapes, quartered

    3 1/3 teaspoons poppy seeds

    salt and pepper, to taste

    Directions

    1-Chop or shred chicken.

    2-Combine red onion, feta, red wine vinegar, grapes, and poppy seeds in a bowl. Throw in chicken and toss. Season with salt and pepper.

    3-Serve over a bed of lettuce with sliced or chopped tomato on the side.
