I am a former chef from Canada and have worked in Montreal, and there is no really best way, if you happen to have a homestyle deep fryer making your own "Frite" is nice, the cheese curds are available here in Canada at all grocery store, if not a nice full fat mozzerella cut into small diced pieces, as for the sauce, in Quebec it can vary from a simple beef gravy to a highly seasoned tomato sauce/gravy blend, alot is up to you.

    For me the fresh cut fries, and a gooey melty cheese plus I like my sauce a bit spicy, I used a combo of gravy, BBQ sauce and a bit of Montreal steak spice with a chili tang, in Montreal there are 5-8 varietys some with meat sauce, smoked meat, mushrooms and onions, bacon and one almost like nachos with alot of ingredients on them, you have carte blanche when it comes to the number of combination available, with the basic ingredients your the boss, in fact there are places in Montreal and through out Quebec that do just Poutine.
