Preparing dried mushrooms?

What is the correct way to prepare dried chinese mushrooms? Can you use the water that they have been soaked in for cooking? Thanks.

  1. Cover them in just boiled water until they are rehydrated....about an hour.Yes you can use the water.If your going to make risotto then you can use this aswell as stock.

You need to soak them in hot water for about 20 minutes then drain and chop as required.  Strain the water through a piece of kitchen paper lining a sieve and you can use the water.  Reason for the straining is you might otherwise find bits of sand or grit coming out of them, and that is not fun to chew.  The water will have a lovely mushroomy flavour though and you can use it.

  4. Put them in a bowl and pour boiling water over them. Leave them to soak for about twenty minutes. Yes, you can add the drained off water to the dish. A great way to add additional flavour to a mushroom dish based on chestnut or button mushrooms. Take no notice of Helen - she should try them sometime.

    Dried Asian mushrooms can be reconstituted by steeping them in warm water/broth for about 30 minutes or by added them to a simmering liquid 10-15 minutes before serving. The flavorful soaking liquid can then be strained for addition to soups and sauces.

  10. Put the dried mushrooms in hot water (but not boiling) and soak for 20 mins.  Remove the stalk and discard from the mushrooms before slicing the caps for adding into whatever dish you are cooking.  You can use the soaking water but be careful to strain off the grit which may have collected in it.
